A lucid dream is a dream in which the sleeper is aware that he or she is dreaming. When the dreamer is lucid, he or she can actively participate in and often manipulate the imaginary experiences in the dream environment. Lucid dreams can seem extremely real and vivid depending on a person's level of self-awareness during the lucid dream.
Actualy you can not choose what you will dream, but you can manage to have choices and since you are completly aware that you are dreaming you can do anything you want without fear.
When I was younger maybe 21-24 I regulary had lucid dreams, but now I can not repeat the experiences.
There are many induction techniques. Like remembering dreams, after waking up start writing them. After certain time you will start to get aware of yourself in the dream. This is called dream recall.
Wake back to bed is easiest method to start lucid dream, that mostly worked for me. Point is that you went to sleep tired, then wake up after 5-6 hours stay few minutes awake, and go back to sleep again.
Reality testing. I never had succes with this, since I never had concetration to do it regulary. Point here is that
you start doing some reality test daily regulary in the goal that you will dream about it and do it in the dreams too.
There are also lot of other techniques but I am not sure how can translate everything of that from my language :D
There is really good article about lucid dreaming on wikipedia
